『八月余一会~困り煎り豆辣椒醤(こまりいりまめらぁぢゃおぢゃん)』

昨日からの悲願であった包子(ポヲヅ)の店へとたどり着く。

時刻は17時台だというのに、既に「お一人様」が数名着席している様子。
そして、客の全ては四人掛けの席で出入口に背を向けた格好である。
その体勢では、不意なテロリズムに対応できないだろうに。

兎に角、個々の占有空間が狭い店である。
後続に訪れる赤の他人と同席するのも煩わしいので、向かい側に給水機が置かれている間取りの相席不可能な席を選んで座る。
これで自分もまた急なテロに対応できない姿勢となる。

番茶と注文伝票を持った女給が現れた。
まずはと菜譜も見ずに啤酒(ビール)中瓶を頼む。
続けて「天津包子(ティエンジンポヲヅ)を」と告げるはずが、どうにもあの包(皮)が啤酒に不似合いな気がして、日和って定番菜譜であるヂャヲヅ小皿(8個入り)を頼む。
啤酒と共に運ばれてきた鳩の餌の如き豆を啄(ついば)みながら、中瓶の中身を徐々に減らしてゆく。

日本人的には、ヂャヲヅを醤油、辣油、酢三位一体で食したいのだが、当店大陸的志向の為か、卓上に辣油差しは存在せず、代わりに粉唐辛子と練り和がらしが常設されている。
駄々っ子のように辣油を要求するのも手だが、奥にある厨房より飛び上がって躍り出る中華庖丁を両手に握り締めた泥鰌ッ髭の料理人が襲い掛かってくる夢を幾度となく見ているというトラウマが災いし、ここはひとつと自制しておいた。

筒状の皮に包まれたの中身は、程好い食材の分量と適度な力加減で捏ねられ混ぜ合わさる丹精込めた結果の産物なのだが、外皮の焼かれ具合が今の自分の好みよりも少々軟らか仕上げとなっており、無論及第点ではあるのだが、もうひと熱慾しかったとも考えるのだ。

次こそは、包子に包まれたいと思う。
